With engagement parties, rehearsal dinners and beautiful weddings happening this weekend, we thought we would share this delicious summer/fall cocktail that is sure to bring a smile to your guests lips. This is an incredibly refreshing and aromatic summer cocktail which appeals to the eyes as much as it does your nose and finally your taste buds. The passion fruit adds a tangy sweetness similar to that of a mango, while the fresh raspberries add some texture to the cocktail. Make sure you use a muddler to release all the flavors of the first three ingredients, and a clear glass that will allow you to appreciate the gorgeous colors!
3 Fresh Raspberries
3 Mint Leaves
1 Lime, cut into wedges
1/2 – 1 tsp Cane Sugar (Or simple syrup made from cane sugar – I infuse mine with fresh mint)
2 oz Ceres Passion Fruit Juice
2 oz White Rum
In a highball glass, muddle the raspberries, mint leaves, 3 lime wedges and the cane sugar. Fill the glass with ice. Add the passion fruit juice, white rum, and then top it off with club soda.
I usually squeeze another wedge of lime and throw it in the glass and garnish with a sprig of fresh mint.
Feel free to play with the amount of sugar. I don’t like very sweet cocktails so I tend to go light. You can also add more passion fruit juice if you love the flavor as much as I do!
